Why Commis Chef?

This is an entry role in the exciting career of a professional chef. A Commis Chef is the starting position in many kitchens and is a junior culinary role. A Commis Chef prepares food and carries out basic cooking tasks under the supervision of a more senior chef. The primary objective of the Commis Chef is to learn and understand how to carry out the basic functions in every section of the kitchen. This gives them the opportunity to experience, consider and value each section with a view to choosing an area where they feel most inspired. The learning journey of any chef will require understanding and experience in the basics that this role provides, in order to progress to any future senior chef role. York College will work with employers and key players in the sector to prepare and equip you to be successful in your career.

The apprentice will be assessed to the apprenticeship standard using four complimentary assessment methods. The assessment is synoptic, i.e. takes a view of the overall performance of the apprentice in their job. The assessment activities will be completed by the independent end assessor as follows:

Qualification and Level

Level 2 NVQ Diploma in Commis Chef. You will develop the knowledge, understanding, skills and behaviours (know it, show it and live it) in relation to people with whom you work, food safety, culinary areas and the business elements of being a chef.

Method of Delivery

Delivery will be in partnership with employers and adopt a blended approach of on and off the job training and professional development. Apprentices will receive training and mentoring in the workplace and knowledge, skills and behaviour development at York College through classroom and kitchen based activities involving the award winning Ashfield’s Restaurant.

What is the Entry Critera?

Employers will set their own entry requirements in order to start on this apprenticeship. There is a requirement to have literacy and numeracy skills equivalent to GCSE at grade D/3 or Level 1 Functional Skills in English and maths.


Based on the entry requirements the minimum duration for this apprenticeship is one year.

What Next?

Progression from this apprenticeship is expected to be into a Chef de Partie or Senior Production Chef role.
